This week’s weekly recipe planner is all about helping you heroic honeys in your quest to feed the tots their veggies – try these five yummy, healthy, and fuss-free kid friendly vegetarian dinner recipes!
Cheesy Veg Burgers
Shh… your kiddos won’t know if you don’t tell. These ingenious veggie patties, a blend of leeks, mushrooms, grated carrots, beans, cheese, and bread (for texture), look just like their meaty counterpart! Serve on toasted buns, spread with ketchup and mayo, for the ultimate delight.
Spanish Omelette
This fluffy vegetable tortilla is a load easier to whip up than you think! A bit of effort goes into the preparation where you’ll have to steam and mash up potatoes and finely chop up peppers (we recommend going for a mix of green, yellow, and red peppers for a colourful dish). After which, just dump the ingredients and your beaten egg mix into a frying pan to cook for around 15 minutes.
Mushroom Turnover with Sour Cream
Feel free to mix the mushroom filling with some chopped carrots, spinach, or potatoes. Make it fun for your littlie by molding the filled pastries into adorable shapes like triangles, moon-shaped, hearts, and stars!
Mini Spinach and Cheese Pizzas
Putting anything on a pizza guarantees instant success with the tots, no? Try these mini pizzas, which use whole-wheat pitas (grab a pack from your nearest supermarket) and part-skim ricotta cheese (less calories and fat). Spread seasoned mix of ricotta, garlic, and oregano on the pitas, top them with chopped spinach and bocconcini (morsels of fresh mozzarella), and pop them into the oven for a couple of minutes or broil on a grill.
Baked Ravioli
The recipe teaches you how to prepare home-made tomato sauce, but you may cheat and use bottled sauces if you want this done in a jiffy. Cook your store-bought stuffed ravioli (go with spinach, ricotta, mushroom, or even butternut squash fillings!) in a pot, drain, and then toss in the tomato sauce. Pour pasta in a large gratin dish, sprinkle with your choice cheese, and bake in the oven for 20-25 minutes. Easy-peasy!
