The magic of the marinade lies in the extra dash of soy sauce, sliced chilli, and sprigs of thyme that goes into the mix. Prepare the marinade the night before, pour it over the wings, wrap the meat in foil, and leave it in the fridge overnight.
Pacific Pork Kebabs with Pineapple Rice
Another must-have: kebabs! We like this tasty kebab recipe, where you skewer pork and sliced bell peppers and glaze with a mixture comprising of honey, pineapple juice, salt, and pepper. Serve with a side of sweet pineapple rice and lime wedges.
Grilled Corn with Garlic Mayo and Grated Cheese
If you like classic corn on the cob, you’ll love this Brazilian-style rendition with coriander, lime, garlic mayonnaise, and parmesan cheese. The trick is boiling the cobs for five minutes and leaving them in the water until you’re ready to grill them. Once you’re ready, pat the cobs dry, rub in the mayonnaise and crushed garlic, then grill for around five minutes. Generously sprinkle on cheese and coriander, along with a squeeze of lime, before serving.
BBQ Baked Sweet Potatoes
A variation to normal white potatoes, these baked sweet potatoes are deliciously different and pair well with a dollop of greek yogurt and sliced spring onions. Rub each sweet potato with a little olive oil and salt, then wrap in double layers of foil. Cook on each side for around 15 minutes until the potatoes are cooked through. That’s it.
