Weekly Recipe Planner: Easter Menu
There are so many good options for Easter brunch out this year but sometimes it’s nice to stay home – how else will the big rabbit find you! We’ve come up with an easy and tasty menu (no time-consuming and expensive lamb roast here) that will have you celebrating with the kids and your feet up in no time!
Carrot and Ginger Soup
Kick off your meal with a nourishing and creamy carrot and ginger soup. In a saucepan, sauté onions, garlic, and ginger that’s been finely chopped up. Add in your chopped carrots and chicken stock, and simmer till tender. Give the mixture a blend in your food processor until smooth, then serve it up with a dollop of sour cream or fresh yoghurt and a sprinkle of chopped dill for garnish.
Cheddar Quiche with Asparagus and Bacon
A rich, hearty quiche is always a choice main for brunch. Best part? This recipe helps you shave off a chunk of time in the kitchen by using store-bought frozen puff pastry. Feel free to mix it up with the fillings and go with veggies of your choice like broccoli or mushrooms, and salmon or ham instead of bacon. If you wish, you can plate the sliced quiche with a side of fresh greens tossed in olive oil.
Creamy Spring Peas with Pancetta
To symbolize new life and the start of spring, it’s only fitting to have a side of sweet spring peas for Easter brunch. This refreshing dish uses a mix of fresh English peas, snap peas, and snow peas, but you can cheat (we won’t tell) with a pack of assorted frozen peas. Cook them with creamed chicken stock and crisp pancetta, with a squeeze of lemon and a sprinkle of salt and pepper.
Gingerbread Easter Bunnies
This is a good one to get the kids involved in making. The biggest outlay here is simply investing in a bunny-shaped cookie cutter, so just check out some gift or baking stores or supermarket as they usually have these in stock seasonally. You can also make your own icing, using icing sugar and a few drops of milk, or use store-bought piped icing to outline the edges and doodle a cute face on each gingerbread cookie!
Easter Egg Oreo Truffles
These clever four-ingredient Easter egg Oreo truffles are adorable, and are actually incredibly simple to prepare. This is another one the kids will enjoy. Simply blend up golden Oreos (the ones that are beige in colour but you can use the standard chocolate type too), add in cream cheese and mix until smooth. Shape the mix into small egg shapes and leave them in the fridge to harden. Once set, coat them in a layer of melted white chocolate. Divide the remaining white chocolate into batches and add in your choice of food colouring before coating them. Let the kids have fun decorating the eggs in rainbow colours!
