LeVeL33, the world’s highest urban microbrewery, presents the next instalment of the “6 Shades of Grapes” series: a 6-course pinot noir wine pairing dinner priced at $188++. On 19 and 20 June at 7 pm, the wine dinner features diverse expressions of pinot noir, celebrating the versatility of the grape varietal, from champagne Blanc de noir to Burgundy.
Specially curated by Executive Chef Jake Kowalewski, each course showcases LeVeL33’s unique Contembrewery culinary approach, which incorporates beer and its brewing by-products into the dishes. The courses are thoughtfully paired with a specially selected pinot noir, offering guests a unique dining experience.
The dinner begins with the Bollinger PN AYC 18 Blanc de Noirs Brut France, crafted by one of the most esteemed champagne houses. This rich and complex champagne is paired with a Hokkaido scallop.
Next, enjoy the salt-baked beetroot, served with celeriac remoulade, spent grain focaccia, raspberry LeVeL33 Blond Lager vinaigrette, and sorrel. This dish is paired with the elegant Pascal Jolivet Sancerre Rouge France 2021, a refined pinot noir with cherry, raspberry, and strawberry notes.
The third course features the Westholme Wagyu tataki paired with a Kimura Cellars Pinot Noir New Zealand 2021, which brings a bright acidity with traces of cinnamon and clove. Transitioning to the fourth course is the local mushroom spent grain tart, and to pair is the Bodega Chacra Barda Pinot Noir Argentina 2021; its floral and fruity undertones elevate the dish’s flavours. The next course features an in-house dry-aged duck breast paired with the Domaine Michel Noellat Bourgogne Pinot Noir 2021 from France, a medium-bodied burgundy wine with a silky texture.
To conclude, a Valrhona dark chocolate torte served with a Pinot noir ganache and Pinot Noir-poached berries is paired with the Hahn Founder’s Pinot Noir USA 2021, a delightful Californian Pinot Noir is known for its long and elegant finish.
