On 19 January 2023, Restaurant Gaig celebrates the homecoming of Carles Gaig – an award-winning chef who brought industry recognition to his 120-year-old family business by dedicating his life to preserving Catalonian traditional recipes while forging new and innovative gastronomic experiences.
For one night only, experience an immersive culinary experience showcasing a six-course dinner menu ($180++ per guest) featuring Chef Carles’s favourite dishes from Restaurant Gaig Barcelona, refined through the lens of Executive Chef, Marti.
A rich cauliflower royale with black truffle is served to begin the evening, expertly prepared to achieve a creamy consistency. This is followed by Carabinero prawn carpaccio, avocado, corn, apple and caviar, a symphony of flavours inspired by Carles’s signature dish – trio of seafood tartare.
The main course features veal head, tripe and leg with chorizo and chickpeas. The traditional head-to-tail recipe encapsulates flavours dating back more than a century ago. The evening ends with a dessert, paying homage to the winter fruit, the Mandarin orange. Carefully crafted in various iterations – sorbet, sponge and fresh segments, topped with persimmon gel to deliver a contrasting flavour to the citrus treat.
