As Mother’s Day approaches, Restaurant Gaig presents a special dish to honour the remarkable women in our lives. From 8 – 13 May 2023, diners can savour the Charcoal Grilled Carabinero Prawns, a culinary masterpiece that pays tribute to the hard work and the love of mothers. Weighing in at 120 grams each, the Spanish jumbo prawns are available at $68++ per dish.
Native to the Mediterranean Sea and fringing the Catalonian coasts, Carabinero prawns are a prized species known for their vibrant red hue. The term ‘Carabinero’ translates to police, as the colour of the prawns matches the uniforms of the Spanish customs police.
Drawing on classic culinary techniques, Executive Chef Marti Carlos expertly grills the Carabinero prawn prepared butterfly-style over hot charcoal, accentuating the sweet savouriness of the coveted seafood. To elevate the flavours, the prawns are paired with a house-made hollandaise sauce, finished with Carabinero bisque. The dish is a remarkable display of the sea gem, reflecting the immaculate balance of indulgence and refinement, making this the perfect treat for seafood-loving mothers.
