Summer suggests refreshing meals that are bright, colourful and, most importantly, support heart health in the strenuous heat. This philosophy is reflected in Yue Bai’s Summer 2023 Menu, which sends out dishes that are brimming with the season’s best bounties.
The modern Chinese restaurant brings forth creative renditions of Chinese heritage dishes that are led by principles of traditional Dietary Therapy (食疗 shí liáo) and interpreted through Singaporean co-owner and chef Lee Hongwei.
Available from 16 May to 9 July, the Summer 2023 presentation features a refreshed a la carte menu with seasonal specials and four tasting menus. They are lunch tasting menus at $78++ or $98++ per diner and dinner tasting menus at $168++ or $238++ per diner. Each dish is a contemporary expression of traditional Chinese Dietary Therapy (食疗), grounded on nourishing ingredients that help ease the Summer heat.
Menu highlights include a chilled blueberries, blueberry-infused Chinese yam; double-boiled superior soup, quail, Tian Ma, sun dried Mandarin orange peel; braised Luffa, minced pork, sun-dried Chinese mustard; crisp-fried Marble Goby fillet, spinach tofu, pineapple sauce; and Yue Bai’s signature braised Hokkien vermicelli, Abalone, sea cucumber, fish maw, shiitake.
