Inspired by the auspicious symbolism of pineapples, Chef Makoto Arami presents the classic beurre noisette almond tea cake with the fragrant fruit, and further elevates it with the refined flavours of kokuto – Okinawan black sugar. Five-day advanced pre-orders can be made from 22 December 2024 to 29 January 2025 at the Patisserie Café and e-shop, with self-collection from 8 January to 2 February 2025.
Pineapples are cherished as symbols of wealth and prosperity, making them a beloved staple for the festivities. Their golden hue, reminiscent of gold, signifies abundance and good fortune, while their sweet flavour represents a blissfully harmonious and fruitful year ahead.
Inspired by this sweet symbol of prosperity, the kokuto pineapple pinanciers are crafted with Okinawan pineapple simmered with kokuto – a natural alternative to refined sugar valued for its complex and robust flavours, as well as lime zest. With meticulous stirring, the compote is reduced till it reaches optimal caramelisation, before combining with almond powder, flour from Japan, and nutty browned French Lescure butter, to be baked.
