Sandwiches are the cornerstone of a good lunch in our opinion. Forget soup, noodles, dumplings and curry. The deceptively simple act of slapping fillings between 2 slices of bread is as satisfying as it is transportable, not to mention nutritious – they are great for lunch boxes and for ticking off a few food groups at once. But if you think it’s all about cheese and tomato, think again. The humble sandwich has come a long way and here are some tasty new ways to cut the crust.
Prosciutto and Avocado Sandwich
Beyond ham, there is prosciutto. This dry-cured ham is the stuff gourmand dreams are made of, and is an excellent choice if you’re trying to refine your kid’s palette a little. Add avocado for some healthy mono-unsaturated fats, and the creamy texture lends itself to being spread – meanimg you can skip the butter. Top with salad leaves and a touch of olive oil and balsamic vinegar.
Egg Sandwich
You won’t find the chopped egg and mayo combo here. This open-faced sandwich consists of an egg (either fried over easy or poached – your child’s choice), avocado, bacon, lots of tomatoes, and a little bit of seasoning as you like it.
Tuna Salad Sandwich
Elevate this classic favourite. Throw the tinned tuna in a bowl and add ingredients like celery, red onion, mayonnaise, Dijon mustard, and ground black pepper into the mix. Then, for the toppings, choose fresh stuff like radish, alfalfa sprouts and romaine lettuce.
French Onion Soup Grilled Cheese Sandwich
You could always serve up a simple grilled cheese sandwich… but where’s the fun in that? Take things to the next level with this French onion soup grilled cheese recipe. Sure, it takes a little more time, but the end result is worth it.
Portobello Mushroom Sandwich
This recipe calls for a really fungi (get it): Portobello mushrooms. Swap the goat cheese for cheddar if it’s too adventurous. Unlike many other sandwiches, this one takes a bit more effort. Both the mushrooms and spinach have to be cooked in a pan with ingredients like olive oil, garlic, and butter. Only then will you be able to throw all these glorious items together on top of bread slices to get a mouth-watering creation.
