Yàn marks five memorable years at the National Gallery Singapore. To commemorate the occasion, Head Chef Ng Sen Tio and his team present a five-course set menu ($98++ per person) that conveys the exquisite classic flavours of Cantonese cuisine. Available from 23 October to 22 November 2020 during both lunch and dinner, the special menu includes a glass of house red or white wine to toast to the occasion.
The soulful Double-boiled Brazilian Mushroom and Chicken Soup offers a welcoming start to the meal with delicacies such as Brazilian red mushrooms from the Yunnan highlands, dried sea whelk, and dried scallops. Another highlight is the luscious Poached Cod Fish with Daikon and Luffa, which present a pairing of waxed duck meat and fermented beancurd drawn from Chef Ng’s decades-old memories of heritage Cantonese staples learned during his first apprenticeship.
The refreshing Chilled Mango Cream topped with Vanilla Ice Cream and Oats served in Coconut accompanied by traditional handmade Sweet Egg Twists offers a new rendition of a signature that has been charming diners since the restaurant’s opening. This special edition continues the culinary ode to yesteryear with the soft and crisp egg twists drizzled with caramel and sesame seeds, evoking sentimental memories of dan san, a traditional Chinese New Year snack in Hong Kong.
