Exclusively available only on 29 November 2020, Zafferano presents a remarkable five-course white truffle and wine pairing menu that has been specially curated to complement Italian white truffles, a coveted delicacy extolled by many as the white diamonds of autumn.
The evening commences with pan-seared Hokkaido scallops, crowned with white truffle, that harmonises with confit Yamanashi egg yolk, cauliflower, and floral spice from Balinese long pepper. It is served alongside the 2017 Vie di Romans Chardonnay, a medium- bodied white with fruity aromas and a creamy texture. Other highlights include house-made tagliolini, a classic way to indulge in the season’s truffle harvest. Dressed in luscious butter sauce and capped with petals of delicate white truffle shavings, the pasta is savoured with the soft, fruity, and elegant 2018 Renato Ratti Nebbiolo. The ruby red wine showcases a delicate, and persistent bouquet with hints of raspberry and strawberry, while velvety and elegant on the palate.
As the night draws to a close, indulge in the delectable buffalo mascarpone and acacia honey mousse, adorned with Piedmontese hazelnuts and white truffle, accompanied by a fine and elegant 2019 Scanavino Moscato d’Asti. The sparkling wine’s fruity nose and medium acidity, together with notes of acacia, wisteria and orange blossoms, offer it as a perfect match for the creamy dessert.
