Da Paolo Dempsey Restaurant & Bar pays tribute to its Italian roots with a new line-up of cocktails (from $22++ to $30++) inspired by ‘bella italia’ – beautiful Italy steeped in rich history, traditions, and cultural heritage. Available from 23 March 2023, the cocktails draw inspiration from Italian ingredients as well as local history and lore, taking diners on an exploratory journey through their transportive stories and tastes.
Discover each cocktail that captures the essence of Italy with its intriguing inspiration, story, and flavour combination. Some highlights include Melone ($22++), featuring an Italian spin on the classic bellini highlighting freshly blended melon puree, rumoured to have been the favourite fruit of famous Italian emperor Carlo Magno. Gelsomino ($26++), which translates to Jasmine, is a nod to a romantic Tuscan legend. Today the flower symbolizes good luck and prosperity at weddings; it sees a mix of whisky, Jasmine tea, honey, and elderflower liqueur. Uvetta ($30++), a rendition of the classic old-fashioned cocktail, showcases a mixture of codigo mezcal, agave syrup, and house-made chocolate bitters and is accompanied by Sultana raisins, an integral part of Italian cuisine.
