In celebration of the year of Rabbit, Restaurant Gaig commemorates this joyous occasion with a traditional rabbit meat stew. A flavoursome warm dish commonly found in most Catalan homes, where family members will come together to enjoy this dish. Available exclusively from 25 to 28 January 2023, diners can enjoy this special a la carte plate at $68++ each for lunch and dinner.
Rabbit meat is well-loved in Catalonia. While there are different ways to prepare the meat, Executive Chef Marti Carlos Martinez enjoys it in a stew. Drawing on a time-honoured recipe, the rabbit meat is slow-cooked for 40 minutes with a base of onion, tomato, carrot and potato, and seasoned with bay leaves and black pepper.
