Bedrock Origin’s The Great Beef & Reef series returns for its second edition for 2023 with the best of America. This series will bring diners on a culinary journey of the finest produce from America, highlighting the best of both land and sea.
From 19 April to 31 July 2023, relish a 6-course dinner tasting menu ($168++ per person) or a 6-course dinner tasting menu with Siberian Caviar (add $49++). Top up $78++ to elevate the dining experience with a curated 5-wine pairing with wines from The Prisoner Wine Company. A 6-wine pairing is complimentary during the launch dinner on 19 April 2023 with any order of The Beef & Reef Series menus.
The culinary journey begins with the Scallop & Lobster Tartare featuring wild-caught Atlantic Sea scallops and Boston lobsters. The next dish presents the Duo of American Oysters – Oyster Rockefeller and Oyster Casino, prepared in two different styles. Following this, the third course is the Duck Maryland Cigar. The duck is sourced from Maple Leaf Farm in Indiana, known for rearing high-quality cage-free ducks that are free of hormones and antibiotics, ensuring natural flavours.
Relish the fourth course of the evening with the Applewood Smoked Lamb Ribs, showcasing 120-gram Colorado grain-fed lamb ribs. The fifth course presents the 100% Fullblood Tajima Black Olive Fed Wagyu Striploin spotlighting Wagyu produced on the most prestigious Wagyu farm in America, Umami Olive Fed Wagyu located in Texas.
Conclude the journey on a high note with the Bourbon Masala Poached Pear highlighting Packham pears soaked in Woodford Reserve Bourbon Whiskey from Kentucky and a blend of warm masala spices.
