Bedrock Origin’s Great Beef and Reef Series returns with its third and final edition for 2024. Available from 4 July to 30 September 2024, Sundays through Thursdays, the Great Beef and Reef III menu celebrates the art of ageing meats.
Rooted in Bedrock’s philosophy of keeping things classic, the menu spotlights various cuts of fish and meat expertly prepared with the primal culinary technique of ageing. With an emphasis on seafood, this edition’s menu will appeal to seafood aficionados and meat lovers alike, making it a dining experience sure to please the palate.
The menu features seven-day aged blackened tuna, a dry-aged Japanese tuna loin that is shallow-fried and served alongside grilled fennel, orange slices, and a citrus glaze. Other highlights include the nine-day aged char-grilled swordfish belly, a Spanish swordfish belly seared and finished on Bedrock’s signature applewood-fired grill, then paired with red wine sauce and an eggplant caponata, as well as the New York dry-aged strip steak, Australian grass-fed beef aged for 21 days and grilled on applewood fire, accompanied by roasted marble potatoes, chestnuts, and veal jus.
On the opening night of 4 July 2024, diners can enjoy the six-course dinner tasting menu ($138++/pax) accompanied by a complimentary five-wine pairing featuring Californian wines. These wines range from crisp and refreshing whites to bold and complex reds with a longer finish, complementing the menu’s flavours well. For subsequent nights through the promotional period, diners can also top up $68++ for the five-wine pairing.
