As the new year begins, Bedrock Origin unveils the 2025 Great Beef and Reef Series, a gourmet showcase celebrating the finest bounty from both land and sea. From 8 January to 28 February 2025, Sundays to Thursdays, savour a five-course dinner tasting menu ($148++ per person), with an optional five-glass wine pairing (add $88++ per person) featuring a curated selection of Californian wines.
Drawing inspiration from its coastal locale, Bedrock Origin’s Beef & Reef celebrates diverse seafood, produce, and premium meats from around the globe; promising an exquisite dining experience with expertly crafted dishes rooted in Bedrock’s classic culinary philosophy. Highlights include:
Sea urchin custard – A luxurious blend of sea urchin and organic eggs, delicately steamed with tiger prawns, finished with a lobe of sea urchin from Tayama, Japan, black truffle slices, ikura, and truffle oil.
Smoked pork belly burnt ends – Juicy Mangalica pork is first marinated overnight in a blend of brown sugar, paprika, black pepper, and chilli powder. The pork is then coated in a house-made barbecue sauce and smoked.
Grilled USDA prime tenderloin – The tenderloin is marinated with confit garlic, thyme, salt, and pepper, then sous-vide and finished on Bedrock’s signature applewood-fired grill.
