Bedrock Bar & Grill rings in the new year with the first edition of its 2023 World Meat Series from 8 February to 30 April 2023 (Sunday to Thursday only), spotlighting exquisite Miyazaki Wagyu by Arita Ranch – known for its fine-grained, speckled marbling throughout the meat, which renders a buttery mouthfeel. The quarterly showcase gives prominence to premium and lesser-known meats from around the globe.
Bedrock procures Miyazaki Wagyu directly from Arita Ranch, which ensures traceability; knowing that the delicacy is sourced from a single farm that raises Japanese Black cattle in the Miyazaki prefecture, so every cut presented at the restaurant is of consistent, top quality. Possessing over 60 years of knowledge and experience in cattle farming, Arita Ranch’s veteran cattlemen further elevate the premium quality of this prized beef through a farming method called EM0 (Earth Medicine 0) that rears their cattle without the use of medicines and antibiotics in the feed, pastures, and water. These factors, along with a specially curated feed mixture, contribute to enriching the beef’s umami flavour and tender marbling.
On the opening night of 8 February 2023, delight in an epicurean 5-Course Dinner Tasting Menu ($158++ per person), centred on the luxurious Miyazaki Wagyu, replete with a glass of welcome wine as well as a four-wine pairing, with compliments from the restaurant. For the remaining promotional period, top up $68++ to opt for the same four-wine pairing to complement the crafted tasting menu, or order the à la carte specials (from $48++) to complete a meal of Bedrock Bar & Grill’s signatures.
The tasting menu begins with the Cured Wagyu Beef Wrapped Oyster, followed by Wagyu ‘Philly Cheesesteak’; 24-Hour Cooked Wagyu Burnt End; Rump Cap Wagyu Steak with pan-seared Hokkaido scallops; and a decadent Hazelnut Chocolate Gateau.
On 8 February 2023, the 5-Course Wine Dinner with Welcome Wine and complimentary 4-wine Pairing is available for dine-in reservations made for 7pm only. From 9 February to 30 April 2023, the 5-Course Dinner Tasting Menu (with an optional 4-Wine Pairing top-up) is available Sunday-Thursday, for dine-in reservations made from 6 to 8.30pm. A one-day advance reservation is required for this tasting menu.
