The finest Greek olives that have been pressed for oil are transformed into safe, healthy, and palatable olive feed for Wagyu cattle through a unique and patented cooking process. A nod to the origins of the 100% Fullblood Tajima Olive Fed Black Wagyu that takes centre stage, the tasting menu emphasises robust, Western flavours that bring out the best of this delectable beef. The menu begins with smoked beef Carpaccio, followed by slow-cooked beef fingers rib; grilled marinated Skirt; New York sirloin steak (100g) with moreish roasted garlic butter potatoes; and an indulgent yet light brioche doughnut.
