Whip up a delicious dinner in less time than it takes to order takeout? Yes, you really can. We’re currently mastering the art of quick dinners by cleverly keeping the list of ingredients short and sweet. Here are five of our favourite dinner recipes, with no more than five ingredients, that embrace simplicity but don’t skimp on flavour.
Chicken and Spring Greens with Acai Dressing
Kick start the meal with a serving of fresh greens dressed in anti-oxidant rich Acai dressing. Toss your favourite mixed greens with some sliced or chopped grilled chicken, red onion slices, and pecans Drizzle over your Acai dressing – a mix of Acai juice, sugar, grated orange rind, rice vinegar, and olive oil. We recommend stocking up on a bottle of healthy Acai juice at home, but if you haven’t got any, simply switch it out for another juice you’ve got in the fridge.
Asparagus Pasta with Mint Pesto
Pasta is synonymous with quick fix dinners, and here’s one recipe that takes the cake. The trickiest part of the recipe is preparing the pesto, and that is essentially just pouring mint leaves, ricotta, and grated parmesan into a blender and hitting the button. When you’ve boiled the pasta and asparagus tips, stir in your homemade pesto, and you’re ready to serve.
Lamb Chops with Mint Gremolata
With the leftover mint from the pesto, tear up the leaves and mix with olive oil, garlic, and pepper to whip up a refreshing marinade. Use this marinade to coat the lamb chops, season with salt and pepper, then broil in the oven for around three minutes on each side. Balance out the distinctive taste of the lamb with a side of gremolata – which is just a refreshing mix of crushed garlic, lemon zest, mint leaves, and salt. You can even add some roasted new potatoes with rosemary or some Greek yoghurt and couscous.
Grilled Pork with Pineapple
It’s not often that we feature pork but this recipe was so juicy to tuck into that we had to share it! The grilled loin-cut pork chops are perfectly paired with the sweetness of of a dressing made from orange marmalade and plain yoghurt. Garnish with sliced grilled pineapples. For a heartier meal, serve on a bed of rice and a side of salad!
Smoky Maple Mustard Salmon
It doesn’t get any easier than this speedy recipe of oven-roasted salmon topped with smoky maple-mustard sauce. The trick is perfecting the sweet, smoky sauce – get the right ratio of maple syrup, mustard, ground pepper, and salt right when mixing it up. Once that’s sorted, generously slather the sauce over your salmon fillets and pop them into the oven for eight to 12 minutes. Again, serve with rice and salad if desired.
