Shake things up at the dinner table this week with some tantalising Mexican fare, sans the jalapenos and hot sauce. Enchiladas, quesadillas, tacos, and even a hearty burrito bowl – yum, dinner’s served!
Crockpot Chicken Enchilada Soup
This nourishing soup is hearty enough as a main meal. Slow-cook whole chicken breasts in a crock-pot with beans, diced tomatoes and jalapenos (with seeds removed to cut the heat factor), corn, and chopped onion, in a mixture of enchilada sauce and chicken broth until fork tender. Serve with toppings of cheese, sour cream, and crushed tortilla chips.
Easy Beef Enchiladas
For a classic enchilada casserole, we like this quick recipe from Circle of Moms. Cook ground beef with chopped onions, seasoned with a dash of salt and pepper, until the meat is softened. Once that’s done, grab a casserole dish and assemble the enchiladas with flour tortillas. Don’t forget to sprinkle on generous handfuls of cheddar before popping the casserole into the oven to bake for 20 minutes.
Grilled Salmon Tacos with Chipotle Lime Yogurt
We like our tacos with ground beef or shredded grilled chicken, but it’s good to switch things up once in a while. This recipe teaches you how to prepare servings of healthy salmon tacos, slathered with yummy homemade chipotle lime yogurt for that extra oomph. Tip: make a large batch of chipotle lime yogurt to store, your little one might ask for more!
Cilantro Lime Rice Burrito Bowl
Burrito bowls are a fuss-free and healthy way of feeding the famished and all you’ve got to do is mix up flavoured cilantro lime rice (cooked basmati rice tossed in lime juice, minced garlic, and fresh cilantro), black beans, sautéed peppers and onions, corn, tomatoes, and shredded cheddar cheese. Scoop out your desired amount to serve in a bowl topped with diced avocado.
Cheese Quesadillas with Guacamole
No Mexican feast is complete without quesadillas and guacamole – loads of it if we’ve got anything to do with it! To prepare the quesadillas, lightly pan-fry flour tortillas sandwiching grated cheddar cheese until golden brown. Set aside to cool before slicing into smaller pieces. For the guacamole, simply mash avocado in a bowl and add finely chopped onions, and coriander leaves. Mix well with lime juice, salt, and pepper.
