Weekly Recipe Planner: Low-carb meals
Contrary to popular belief, going low-carb doesn’t mean it’s all about losing weight. In fact, some do it to feel better, and – more importantly – for the health benefits such as lowered risks of heart disease and diabetes. With this in mind, maybe it’s not such a bad idea to incorporate low-carb meals into your little ones’ diet every once in a while, especially if building a habit like that will benefit them in the long run!
Spaghetti Squash and Meatballs
It may not be actual spaghetti, but squash is a much healthier alternative to pasta. Besides, the meatball (use turkey instead of beef) and mozzarella cheese combo will definitely enhance the flavours of this kid-friendly meal.
Cauliflower Pizza
Who can say no to pizza?! This recipe shows you how to make a pizza crust using cauliflower and an array of other ingredients, including basil, oregano, and loads of cheese, of course. The toppings are entirely up to you, so get the kids to help you out for this (fun) step.
Cod with Tomato and Caper Sauce
Cod: one of those things that are packed with flavour, even with minimal seasoning. Combine this buttery fish with ingredients like capers, garlic and olives for a super satisfying, low-carb meal.
Apple, Peanut Butter and Strawberry “Sandwiches”
A simple snack to prepare, this fruity, nutty “sandwich” is guaranteed to fill your little ones’ tummies. Have it for breakfast, or as an afternoon snack when they get home from school (best not pack it in a lunchbox if your school has a nut-free policy). For a little bit of a treat, drizzle some maple syrup over.
Chocolate Mousse
It’s amazing to think desserts like chocolate mousse are really low-carb and can be healthier than other regular desserts! Whip up this smooth, creamy mix for the kids, and add or reduce components of the recipe as they like it.
